The authentic smell of wood-fired cooking.

Especially good in grills and ovens, where it’s classically used to cook suckling pigs in the rotating wood ovens of Spain. 

This addition to our wood stock is dark, richly aromatic and forms the most solid ‘pure white’ coals and embers. It’s possibly the best wood we stock and I’d say it’s ‘the best’ we've ever cooked with. 

It has a long burn profile and beautifully sweet aromatics. This is the the oak which grows the acorns, which feed the pigs that goes on to make beautiful Iberico Ham
